Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon ginger minced
  • 1 can 14 oz diced tomatoes
  • 1 can 14 oz coconut milk
  • 2 cups baby spinach
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric
  • 1/2 tsp red pepper flakes adjust to taste
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro chopped (for garnish)
  • Cooked brown rice for serving

Instructions
 

  • Heat olive oil in a pan over medium heat. Add chopped onion and sauté until translucent.
  • Add minced garlic and ginger, sauté until fragrant.
  • Add curry powder, cumin, coriander, turmeric, and red pepper flakes. Cook for 1-2 minutes.
  • Stir in diced tomatoes (with their juices) and coconut milk. Bring to a simmer.
  • Add chickpeas and let the mixture simmer for about 10 minutes.
  • Add baby spinach and cook until wilted.
  • Season with salt and pepper to taste.
  • Serve the chickpea and spinach curry over cooked brown rice. Garnish with chopped cilantro.
