Ingredients
For the Bowl:
2cupschopped romaine lettuce
1cupcooked cauliflower rice
1/2cupblack beansoptional for slightly higher carbs
1cupgrilled chicken breastsliced
1/4cupshredded cheesecheddar or Mexican blend
1/2avocadosliced
1/4cupchopped red onions
1/4cupdiced tomatoes or salsa
2tbspsour cream or Greek yogurt
Fresh cilantrofor garnish
1tbspolive oilfor cooking
Optional Add-Ins:
Jalapeños
Lime wedges
Chipotle hot sauce
Diced bell peppers or grilled zucchini
Instructions
Sauté cauliflower rice in a pan with a little olive oil, salt, and pepper for 3–5 minutes until tender.
Grill the protein
Season chicken with chili powder, cumin, garlic powder, salt, and pepper. Grill or cook in a skillet until browned and cooked through. Slice into strips.
Assemble the bowl
In each bowl, layer lettuce and cauliflower rice as the base. Top with chicken, black beans (optional), avocado, cheese, red onions, and salsa.
Finish with toppings
Add sour cream or Greek yogurt, cilantro, and a squeeze of lime. Add hot sauce if you like extra spice!
