  • 1 Large skillet
  • 1 Cutting Board
  • 1 Knife

Ingredients
  

  • 1 lb ground beef or ground chicken
  • 1 tbsp olive oil if using chicken
  • 1 packet low-carb taco seasoning or 2 tbsp homemade
  • 1 cup bell peppers chopped
  • 1 small onion diced
  • 1 can 10 oz diced tomatoes with green chilies, drained
  • 1 cup shredded cheddar or Mexican blend cheese
  • Salt & pepper to taste
  • Optional toppings: sour cream avocado, cilantro

Instructions
 

  • Heat a skillet over medium heat. Add ground beef and cook until browned; drain excess fat.
  • Add peppers and onions; sauté 3–4 minutes.
  • Stir in taco seasoning and tomatoes. Simmer 5 minutes.
  • Sprinkle cheese over top, cover, and cook until melted.
  • Serve with cauliflower rice, lettuce wraps, or salad.

Notes

Swap bell peppers for zucchini or mushrooms.
Use ground turkey for a lighter version.
