1 lb ground beef or ground chicken 1 tbsp olive oil if using chicken 1 packet low-carb taco seasoning or 2 tbsp homemade 1 cup bell peppers chopped 1 small onion diced 1 can 10 oz diced tomatoes with green chilies, drained 1 cup shredded cheddar or Mexican blend cheese Salt & pepper to taste Optional toppings: sour cream avocado, cilantro
Heat a skillet over medium heat. Add ground beef and cook until browned; drain excess fat.
Add peppers and onions; sauté 3–4 minutes.
Stir in taco seasoning and tomatoes. Simmer 5 minutes.
Sprinkle cheese over top, cover, and cook until melted.
Serve with cauliflower rice, lettuce wraps, or salad.
Swap bell peppers for zucchini or mushrooms.
Use ground turkey for a lighter version.
