Ingredients:
- - 1 cup cooked quinoa
- - 1/2 cup roasted sweet potato cubes
- - 1/2 cup roasted broccoli florets
- - 1/4 cup roasted red peppers
- - 1/4 avocado sliced
- - 2 tbsp pumpkin seeds
- - 1 cup mixed greens
- - Juice of 1/2 lemon
- - 1 tbsp olive oil
- - 1/2 tsp turmeric
- - Salt & pepper to taste
Directions:
Preheat oven to 400°F.
Cut sweet potatoes, broccoli and red peppers
Add with olive oil, turmeric to vegetables -
Roast sweet potatoes, broccoli, and red peppers with salt, and pepper for 20-25 minutes.
Assemble bowls: start with greens and quinoa, top with roasted veggies,
avocado, and pumpkinseeds.
Drizzle with lemon juice and a little olive oil before serving
