Ingredients:

  • - 1 cup cooked quinoa
  • - 1/2 cup roasted sweet potato cubes
  • - 1/2 cup roasted broccoli florets
  • - 1/4 cup roasted red peppers
  • - 1/4 avocado sliced
  • - 2 tbsp pumpkin seeds
  • - 1 cup mixed greens
  • - Juice of 1/2 lemon
  • - 1 tbsp olive oil
  • - 1/2 tsp turmeric
  • - Salt & pepper to taste

Instructions
 

Directions:

  • Preheat oven to 400°F.
  • Cut sweet potatoes, broccoli and red peppers
  • Add with olive oil, turmeric to vegetables -
  • Roast sweet potatoes, broccoli, and red peppers with salt, and pepper for 20-25 minutes.
  • Assemble bowls: start with greens and quinoa, top with roasted veggies,
  • avocado, and pumpkinseeds.
  • Drizzle with lemon juice and a little olive oil before serving
