Ingredients
  

  • 1 ½ cups almond flour
  • ½ cup pumpkin puree
  • 3 large eggs
  • ¼ cup coconut oil melted
  • ½ cup erythritol
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line loaf pan with parchment.
  • In bowl, mix eggs, pumpkin, oil, sweetener, and vanilla.
  • Stir in almond flour, baking powder, and spices.
  • Pour into pan and bake 40–45 minutes.
  • Cool completely before slicing.

Notes

Serve with cream cheese or sugar-free nut butter.
