Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat.
Prepare sweet potatoes: Peel (optional) and cut into evenly sized sticks, about ¼ to ½ inch thick.
Soak (optional for crispiness): Place cut fries in a bowl of cold water for 20–30 minutes. Drain and pat very dry with a clean kitchen towel.
